    So I decided to some Christmas cooking today. Made some treats for me as well.
    Baked these Macaroons which I thought were quite good. You need to be on rung three for these.

    Macaroons
    2 egg whites
    1/2 tsp vanilla
    1/2 cup Splenda
    1 cup shredded coconut unsweetened (place in food processor to make finer)
    1/4 cup almond flour (I put almonds in food processor)

    Whisk the egg whites till they're stiff and blend in vanilla and Splenda.

    Add together the shredded (and made finer in the food processor) coconut with the ground up almonds.

    Gently fold the nuts into the egg white mixture. Do not over stir. They should just be blended in. Let sit for about 5 to 10 minutes

    Drop on parchment paper on a cookie sheet. Shape them however you want. They do not change shape while cooking so how you put them in the oven is how they will come out.
    Cook at 325 (my oven is on the hot side) for about 15 minutes. You want them brown on the bottom and slightly brown on top.
    This recipe made 14 cookies.

      Those sound great, Liv

      I have made macaroons using a recipe using only coconut, splenda and an egg and they are very crumbly, but yours sound as if they will hold together better
      Wondering how to get 'most' of your net carbs from your induction veggies?

          I cant wait to try these! My oven packed up the other day and i have to wait until monday for the engineer to come fix it for me
