So, a few weeks ago I came across this recipe on Linda's site.
Linda's Low Carb Menus & Recipes
I finally tried it today...although I tweaked it a little. Sometimes on purpose, sometimes by accident. Added a bit more vanilla, cinnamon and splenda. Smelled divine in the oven. Used large curd cottage cheese instead of small. Don't have a working mixer right now so I used a hand held drink mixer. The texture was totally smooth and no chunks left from the cottage cheese. I'm a lover of custard and this is much like custard. Hits the spot! Next time I will try to pour the mixture into custard dishes and perhaps put them in a pan of water??
Anybody know how to cut down the moisture in the baking dish?? When I removed from the oven and cut out a small piece, the empty area filled up with water in the dish. Soaked up with paper towels but would love to know the right way to solve this!!

It really flattened out though. I'm more interested in rich taste than presentation.
I do think the 3/4 cup water is a bit too much.
