Dump a can of pumpkin into a mixing bowl. The lowest I've been able to find has 4 net carbs per 1/2 cup serving, 3 1/2 servings are in the can.
Melt 1/2 - 1 stick of butter, some cinnamon, a dash of Da Vinci Vanilla, 3 splenda packets (Not the bag since it is said to have a higher carb count!), 2 tbl of heavy whipping cream and a tiny dash of nutmeg if you have it lying around. Let cook for a minute and then dump onto your pumpkin mixture.
Stir around, place servings into small bowls, add a dollop of heavy whipped cream to the top and there you go.
It's quick, cheap and very yummy. You can also add in extra fiber, walnuts, etc. as you see fit.
