Pumpkin Pie Mock Danish
2 oz cream cheese
1 tbsp Splenda
1 tbsp pumpkin
a touch of pumpkin spice
1/2 tsp vanilla
1 egg
Soften the cheese for 20 seconds. Stir, and add the egg. Stir until the yolk is blended. Add the remaining ingredients, make sure you just sprinkle a little bit of pumpkin spice. Nuke for 2 minutes 10 seconds. I like to stir it. The pumpkin I use by Libby says a WHOLE can is only 9 gram, so I know that a tbsp can't be much at all. I would say it may be around 6 grams total. You may want to add butter to enhance the flavor even more, but I don't.

I added a tiny bit more of vanilla than it called for and then just a touch more of pumpkin pie spice and it was friggin' delicious! I topped it with a couple tbsp’s of whipped cream and then drizzled Atkins Sryup over it. It was to die for! Like a lucious, decandent dessert...definately felt like I was cheating. I can't wait to "show it off" and let my non-low carbing friends try it when they come over for tea. I will definitely be making this again…maybe tonight for that matter. I love finding great and tasting low carb recipes. :joy
