  • Sugar-free Flour-free Peanut Butter Cookies

    Ingredients:

    1 c. Chunky Peanut Butter (or 8 TBS)
    1 c. Bulk Splenda (or 24 packets)
    1 lg. egg
    Directions:

    Mix ingredients.
    Drop by spoonfuls onto ungreased cookie sheet.
    Use a fork to mash cookies into the shape and size you desire.
    Bake at 350o for about 10 minutes or until centers are not wet.
    Servings: 12

    Carbs: <4 per cookie

    so these actaully cook even though itws basically just peanut butter? what kind of consitancy do they have??

      This recipe does work. I used to make the "regular" version of these cookies.

      The texture is sort of like shortbread, with a VERY intense peanut taste. It's a good dunking cookie.

          Not induction legal but later on. I think it's the third rung of the carb ladder. And be sure to buy the unsweetened natural peanut butter.

          These cookies sound great. I'll have to try them soon.

            does it have to be chunky peanut butter? Will creamy work?

              I tried these, and thought that because my pb was already sweetened with splenda I didn;t have to add it in.

              They came out really brittle, and they were not even sweet. They even made my stomach hurt with the few bites I took.

                I like this cookie.
                Now that I am entering into the last rung I added oats to them. I use 1/2 cup splenda for my taste. But yes really brittle.

                  I just made some with a half cup of erythritol, some stevia, and some thickenthin notsugar thickener. the consistency is good, but I think they're a bit too sweet.

                        Just cooked these and they are a bit dry and fall apart easy. Not bad taste but like I said a bit dry and brittle.

                        edited to add.. I think I may try again adding a little flax meal and butter to see if the dryness can be overcome.

                          I've experimented with this recipe a few times. I believe it's based on a Paula Deen recipe?

                          Sometimes I'll add cream cheese. I've always cut the amount of splenda to half. You can also use powdered stevia or xylitol, those will give you slightly different types of sweetness.

                          Sometimes I've added whole peanuts to the mix, other times almond flavoring and cocoa. I've also added pecan meal and almond meal.

                          Feel free to experiment with the recipe! Just make sure that your ingredients are legal for YOUR RUNG, and that you count all carbs.

                            I made these about a week or so ago and I wasn't thrilled with them, they are dry and tend to fall apart.

                            They didn't seem really cookie like to me at all. I think personally there are better low carb cookie recipes out there using almond flour.
