  • Cheesecake Bites

    1/2 cup cream cheese -softened
    1 packet splenda
    1/4 cup whipping cream

in a mixer beat the cream cheese and cream together. add splenda. beat until mixture becomes really stiff. drop by the spoonful onto a baking sheet with parchment paper. freeze.

these are really good but you have to watch your portions because of the cream and cream cheese. very hard to only eat a couple. you could also add flavors like vanilla, or peppermint extract to make different varieties.

you could do big batches at a time and freeze them on the parchment covered tray, then once frozen transfer into a freezer bag, so whenever you have a sweet tooth you can just grab one. enjoy!

Can they just be refridgerated? They're very good but get ice crystals on the inside when I freeze them, I figure they might have a better consistency refridgerated but didn't know if they'll melt!

and yes they can be refrigerated... i only freeze them cause i like them like that, haha. but you just need to get them cold, so they set.

          Super!

I tried putting just 1/4 tsp vanilla, which I thought did improve them a bit.

And in part of the batch I put just a spoonful of peanut butter...yumm. Turned out fine, very subtle peanut butter taste.

Also got some Hershey's Lite chocolate syrup to dip them in..still 10 g net carbs for 2 tbsp so not for Induction, but I think they go well together!
