  • Best. Cheesecake. Ever.

    Okay so I was making some homemade SF jello and I noticed a yummyyyy recipe on the back of the KNOX box of gelatine. I made it...and I tasted it...and OMG Best LC Cheesecake EVER!

    1 envelope KNOX Unflavored Gelatine
    1/2 cup of Splenda
    1 cup boiling water
    2 8oz packages of cream cheese, softened
    1 tsp vanilla extract

    1.) Mix gelatine with Splenda in small bowl; add boiling water and stir until completely dissolved, about 5 minutes.

    2.) Beat cream cheese and vanilla in large bowl with mixer until smooth; slowly beat in gelatine mixture.

    3.) Pour into dish of choice. Refrigerate until firm, about 3 hours.


    You can cut it as small as you like, I will be cutting mine into 8 servings.

    The entire recipe has:
    1,623 Calories
    158.2g Fat
    22.9g Carbs
    34.2g Protein

    So 8 servings would be:
    202.8 Calories
    19.75g Fat
    2.86g carbs
    4.3g protein
    *and there is approx. 2 oz of cheese

      Sounds like a whole lot of yummy to me! Wonder how it would be with flavored gelatin. I bet raspberry or something like that would be pretty durned good.

        Sounds so good I am afraid to make it...I LOVE Cheesecake, I may have trouble eating just 1 portion.

        Maybe I should make it for a special occasion to bring to someone's house and leave any leftovers there!

        I am loving this Atkins but I know what my downfalls are and need to stay away from them!

              I made this last night, instead of making one large cake i seperated it into 6 mini ramekins (i used half the ingredients plus a little double cream), i made it no crust as i'm on induction, but they were still yummy.

                I tried this today and it came out great. I used sugar free rasberry jello instead. Its a bit too raspberry-ish for me but next time I will try half raspberry / half unflavored gelatin (or make a double batch). Thanks for the recipe!

                  i just made with sugar free strawberry jello, way too sweet for me and i didn't even add any splenda!! Very sad as used all the cream cheese so can't make any regular will have to wait to go to the store again! Maybe i should have used half the jello mix?
