Philadelphia Cheese whipped with sugar free jelly is a favourite with most beginners, but it is very sweet and the flavours quite juvenile. Try this:
Finely grate the rind of a lemon into a bowl. Half and squeeze the lemon. Add juice to bowl. Add sweetener to taste (I use a half teaspoon of liquid Hermesetas (Saccharin), but you could use Splenda). Add 200-300g Philiadelphia Cream Cheese (7-10 oz - it's not critical and depends on how it's packed where you buy). Dissolve a sachet of gelatine in 1.5 cups of boiling water water. Add to bowl and whisk. Turn into container for setting and cooling in fridge.
Options.
Up to a level teaspoon of Xanthum Gum can improve the texture.
Two or three tablespoons of "No added sugar" lemon cordial can improve the taste - not on induction as this has a carb penalty. In Europe I use Robertson's no added sugar lemon cordial.
Try it. It is sharp and refreshing, and will help get you off sweet tastes.
I often have it with a few strawberries and some full fat Greek Yoghurt. When strawberries are expensive I defrost a few frozen mixed berries.
I use Total Greek yoghurt flavoured will high quality vanilla extract (In UK from Waitrose) and sweetened with Splenda. (To the 110ml vanilla extract bottle I add 20 Splenda tablets and that lasts ages.)
