    This is a great breakfast for the nut rung and higher. It REALLY makes you feel like you are cheating, it is that good! I have this once in a great while for something different and special. I make it one serving at a time in the micro, but I'm sure you could expand the recipe to make more at a time.

    1TBS coconut oil
    1 oz cream cheese
    1 TBS coconut flour
    1 egg
    sweetner (I use 1 pkt truvia and 1/2 pkt splenda)
    1/4 tsp baking powder
    1 tsp vanilla extract
    sprinkle of cinnamon
    1 tsp crushed pecans

    topping
    1 tsp sugar free pancake syrup
    butter

    Melt the coconut oil in the micro, add cream cheese and stir till combined. add coconut flour, sweetener, baking powder and cinnamon and mix to a paste like consistancy. Add egg and vanilla, mix well and it will become like cake batter. When it's all mixed smooth, sprinke pecans on top and micro for 2 mins. I do it all in a glass salad bowl. It is great to eat just like that, but for the sticky bun part, melt a little butter in a pan and brown the "bun " on both sides. Remove from pan and add about 1 tsp of sugar free pancake syrup, heat and pour over the bun. ENJOY.

    Wow - that is quite interesting. I don't think I have seen coconut flour in the store I may not have looked carful enough.

      I am in NJ and they carry Bob's Red Mill brand in the organic section of Wegman's. It's expensive, but a bag lasts me a long time as I use small portions at a time. I think you can buy it online or make it from unsweetened flaked coconut. Everything I make with it tases like baked goods much more than flax does. It doesn't taste much like coconut at all.
