Low Carb Peanut Butter Pie...MOUTHWATERING!

  • Low Carb Peanut Butter Pie...MOUTHWATERING!

    Omg...This pie is to die for. No joke. Gotta try it out and let me know what you think



    1 Tbsp. cocoa
    8 packs of Equal (or sweetener of choice)
    6 Tbsp. butter
    4 oz. cream cheese
    4 oz. heavy cream
    2 Tbsp. heavy cream
    5 Tbsp. Simply Jiff peanut butter
    6 Tbsp. spoonable Splenda (if you don't have this, it measures like sugar so use your favorite sweetener)
    1 cup crushed pecans
    16 Tbsp. Cool Whip
    1 square of unsweetened chocolate
    Crust:
    Mix pecans and 4 Tbsp. melted butter. Pour in pie plate, spread out to cover bottom of plate. Put in freezer.
    Chocolate Layer:
    Melt 2 Tbsp. butter and unsweetened chocolate in microwave on low setting for approximately 2 min. Mix in 2 Tbsp. cream and 1 tsp. vanilla. Stir well. Add in 8 packs of Equal. Pour over frozen pie crust. Put back in refrigerator.
    Peanut Butter Layer:
    Mix together:
    Peanut Butter
    4 oz. cream cheese,
    1/3 cup Splenda.
    Mix with blender. Spread over frozen pie.
    Chocolate Whipped Topping: Mix 1 cup of Cool Whip, 1 tsp. vanilla, and 1 Tbsp. cocoa with spoon. Spread on top of pie. Refrigerate. Cut pie into 12ths. Each piece has 5.3 carb. This pie is delicious! It's very rich so 1/12 is more than you think.

    Hmm - mmmmm
    Peanut butter will be by bane - I am afraid I have to stay a bit away from it. But if I every get a grip on myself here is a recipe.

    Cool whip is not induction friendly though - I think it comes with corn syrup or something. We have to use real cream on Atkins (which is a good thing). Also need to stay away from peanut butter with hydrogenated oils.
    Equal is apartame - the sweetener Atkins told us to stay away from. So splenda may be a better choice for most.

    And this is a rung three recipe it looks like
    But I am book marking it.

        I think if you look at the list of ingredients, you'll see that this really isn't Atkins friendly.

        This isn't allowed on Atkins ... ever.

        And ... nuts aren't allowed on Induction.

          YesJif contains molasses and sugars doesn't it? At least their regular one. Even their "natural peanut butter" contains sugar. Not a brand for people on Atkins at all. But there are good brands out there.

          It is also good when you post a recipe to specify the rung. It helps people who are looking for recipes.

            I dont think one thing is gonna break ya. Gotta have some fun! Ive done great on my low carb diet. I dont really do an atkins diet persay. I just eat under 30 carbs a day and no sugar...and if it is I use Truvia. Im not gonna live my life under a microscope for food.

              Well it may not "break you", but just the mention of peanut butter will set off cravings for a lot of people, myself included.

              To some of us PB is a "dirty word".

              But to those of us who ARE on Atkins, most will probably choose to stay away from that recipe at Induction.

              Of course...I hope you enjoy it!

                I have fun. Sugar and transfat are just excluded from my fun becasue they are bad. But I still have loads of fun
