  • Chocolate cake

    This past weekend was my birthday and I knew that a friend would be bringing a cake to my party even though I told her about Atkins and that I am not currently eating any sugar. To help myself not feel left out I made myself a single serving chocolate cake!!

    1/4 C. golden flax meal
    1 Tbsp unsweetened cocoa powder
    pinch of salt
    1/2 tsp baking powder
    2 Tbsp erythritol
    1 egg
    splash of vanilla
    1 tsp oil

    I mixed everything together, microwaved for 1 1/2 minutes, then topped with freshly made whipped cream, and VOILA! It was delicious!! I might even add just a tsp more cocoa next time. I thought it was really tasty. Don't forget to spray your bowl before you microwave. Mmmm-mmmm!

    That sounds really good. I wonder if you could use Splenda instead of the erythritol. Humm, I have to think about that one and maybe give it a try. Thanks for the tip

      Yeah, I don't see why Splenda wouldn't work just fine! I just happened to have bought erythritol to try so that's why I used it. This is essentially just a modified muffin-in-a-minute recipe.

          I'm still on the first rung. Normally I wouldn't have made something like this because I don't think cocoa probably gets put in until the nuts/seeds rung, but knowing my friends they would push and rag on me if I didn't have something in front of me on my birthday. Dumb I know, but that's how they are. Also, the friend who brought the cake has never had a weight problem and really just doesn't understand what it's like to not eat whatever I want. I figured this was a good compromise. I didn't stall out at all, and in fact had lost another pound by the next day.

            When I go a bit bananas I make the three minute chocolate cake

            1 egg
            1/2 teaspoon vanilla
            1 tablespoon heavy cream
            2 tablespoons cocoa
            3 tablespoons plus 1 teaspoon granular Splenda or equivalent liquid Splenda
            1 teaspoon baking powder *
            1 tablespoon butter, softened

            I use less sugar and I I use less baking powder and I add a bit of whey. It is pretty good. Nice with whipped cream and strawberries but you need rung 4 for that. Never thought of adding flax - maybe I'll experiment with that next time.

              That makes very good sense. Some folks think cocoa as a spice and hence legal..
