  • The most delicious ice cream/mousse

    I am on strict induction but plan on eating this on the weekends once I'm on a higher rung....

    one sq of 85% lindtt slightly melted and 2 teaspoons of mascarpone....two packets of splenda.
    mix all together. 2 hours in freezer and then put in fridge.

    IT'S THE MOST DELICIOUS THING I HAVE EVER EATEN IN MY ENTIRE LIFE! It's like awesome delicious thich mousse and it super low carb and not frankenfood-y.
    5'4, Medium framed female.

    Weight: 135/125/115

    Exercise: Stroll leisurely around Miami Beach 1-3 times a week, between 4-8 miles every time.
    Heavy weights (for me) slow burn method (Body by Science).

    How many servings is that? I'm asking because 2 packets of Splenda for 1 square of chocolate and 2 teaspoons of mascarpone sounds like a lot to me!

      Hi Georgina,

      It's just one serving, but I always found the lindtt 85 very bitter. I actually use about 1.5 now that u mention it...depends on taste.
      Net carbs are:
      1 for mascarpone
      1-2 splenda (depends on ur taste)
      2 for chocolate

      4-6 net carbs. Not induction friendly but can b had as a treat once we introduce nuts and soft cheese. Not to have every day though...can b addictive. Trust me

        The chocolate still has real sugar in it ... I wouldn't consider it Atkins friendly.

          That's true, Atkins gal....I guess i thought to treat this as a treat....once a month or so once I'm on maintenance. But one can always sub the chocolate for a SF kind...also can use sf syrup instead of Splenda.
          I think it's really the mascarpone that makes it...the consistency is amazing...the rest of the stuff you can alter as you see fit
