    These were awesome! I used low carb french vanilla whey protein powder instead of the atkins shake mix. It worked great. Not too sweet, almost like pancakes. I made a batch and took it to class with me as a snack. It worked out great, they keep well and are very satisfying. I'm definitely taking a batch for my plane ride in two weeks! Thanks so much!

      Mine barely rose. I finally tried them....like a year after I was going to first try them. They weren't bad but they didn't rise like I expected.

        I can't wait to try these for a dessert with a little Splenda and cinnamon on them.

        I was under the impression that they don't make Atkins Shake Mix any longer, or did they start to again? I don't have a clue what vanilla whey protein powder is, but I'll ask at the health food store and recheck the Atkins web site.

          You might try adding a bit of baking powder in it. Let us know if that works out better!

          My flax pancakes are edible without baking powder, but much better when I remember to add it.

              Thanks to the original poster (back in 03!) and all those bumping this up since then. Definitely some hidden gems around here. I don't have any protein powder, so I modified 1/2 of a flax pancake recipe (about 3T flax seeds, ground, one egg, baking powder and sf vanilla Toroni, left out the cream) and let it set up for a few minutes before frying. I had one plain, the other with whipped cream. They were wonderful!

                Okay. So I stumbled on this thread and am now bumping it.

                I tried the original recipe with the Gold Standard Protein System Royale protein shake mix (0.5 g sugar per 2 scoop serving size). I don't buy this - my dad does and I filched a can. From what I understand it is not as cheap as, say, Designer Whey, but it is the tastiest protein shake I've ever had. I did not add the water called for in the original recipe and the "batter" was quite thick.

                And while I am not an expert fryer - Oh. My. Really good. Even without any sort of topping.

                The key to mine rising was oil temperature - the first two were flat-ish and dense because the oil was not hot enough (about 1/4" canola in the bottom of a deep pan). The others rose a respectable amount albeit they spread because of the shallow oil level. I think deeper oil or maybe even using a deep fryer would give one a better "donut" shape. Or go the funnel cake route and use a pastry bag to squirt it out....

                It appears that using a protein shake powder will give you a moist, dense, spongy interior texture - you will not get "light and airy". But, a MUCH better way to get your protein shake if you're like me and can't really get over the slimey throat feel of protein shakes, no matter *how* tasty they are.

                So for me, the recipe yielded 4 heaping tablespoon of batter "donuts". Add half a packet of Splenda for dusting and you end up with 2 carbs, rounding the count up.

                  I searched for donuts and came up on this thread. Please, all y'all experts out there: what products (Atkins Baking stuff, protein shake powder, flax meal) are the best to use, are they still available, and most importantly, where? I live in the northeast, and darnit, I do want a donut!

                    I'm eating these right now.

                    I used vanilla protein powder and BAKING powder just a pinch it helped a lot they rose up great. I did mine funnel cake style and put SF syrup on them. Very nice. This will be great for breakfast on occasion because I didn't know what to do with the powder cause drinking it is...bleh!

                          I don't think most of us are using atkins powder. Its whey protein powder. You can find it at walmart (by vitamins and diet stuff). I would think just about any store would have it in that area also online stores have it. My husband bought the vanilla one for him a while back but I went to sams and bought a massive chocolate bag of whey protein powder. It would take me a lifetime to use it since I rarely do. Not one of my wisest investments. lol
