I got this idea from a post on this board discussing coconut oil. Someone mentioned making chocolates using coconut oil, cocoa, and splenda, so I made a variation on these this evening. There are AMAZING:
2TBS (1oz) coconut oil (I used the expeller pressed, not the virgin type which has a strong taste)
1TBS unsweetened cocoa powder (1.3 carbs)
1TBS heavy whipping cream (can leave this out if you like plain chocolate) (1 carb)
2 packets splenda (1 carb)
TOTAL carbs = 3.3
Melt the coconut oil (if it isn't already liquid). Stir in the cocoa, the cream, and the splenda. Put in little dots on parchment paper (I got about 10), and put on a baking sheet in the freezer for about 5 mins.
Watch the calorie count, though - 1TBS coconut oil has 120 calories
Great for Halloween when everyone else is eating carb-laden chocolate - also better than chocolate with sugar alcohols
