    Forget that carb-laden SF Jello nonsense!

    Tofu Pudding

    Ingredients
    4 oz soft tofu
    1 tsp chocolate powder (or to taste)
    1/2 tsp vanilla flavor
    1Tbsp heavy cream (sub non/fat milk for LF, or water)
    sweeten to taste

    Preparing
    Place all ingredients in blender or food processor and blend until smooth. Best if chilled in frig for 1 hr. but can be eaten immediately.
    Can also be made with a little fruit instead of the chocolate.


    Fitday doesn't have tofu information per ounce, so I'll have to post the nutrition later. I'll also post how it tastes as I am planning to make this tonight (but with banana extract in place of the chocolate).

    Okay. Here is how I made the pudding last night.

    Combine in a blender:
    1 12 oz. package silken tofu
    4 tbl heavy cream
    1/2 tsp allspice
    1/2 tsp rum
    1 tsp banana extract*
    3 drops yellow food coloring
    3 tsp Splenda, or to taste

    Blend until smooth, makes four servings. I dished it into four custard cups and sprinkled a bit more allspice on top. If I'd had some heavy cream whipped up, I might have used a bit of that for garnish.

    Per serving - 83C, 6g fat, 3g carbs, 6g protien (These are my approximations based on the tofu, cream and Splenda. I ignored the other ingredients that are used in such small amounts.) I'm in OWL, but I don't see anything here that is not okay for induction. If the eighth teaspoon rum concerns you, use vanilla instead.

    I found this to be very tasty although I could clearly taste a soy flavor. My boyfriend, however, could not taste the tofu.
