  • Pumpkin Treat - Induction Friendly

    I find this to be a quick little treat, low carb, and induction friendly.

    Mix the following together:

    1/2 Cup Libby's Pure Pumpkin (NOT pie filling which has sugar)
    1 Tablespoon butter
    1 Tablespoon heavy whipping cream
    1/4 Teaspoon pumpkin spice
    1 Packet of Splenda

    Heat in the microwave for 15 seconds. Stir. Heat another 15 seconds. Yummy. (Note - heating times may vary slightly depending on microwave)

    I put the extra pumpkin from the can in a bowl in the fridge for my next use.

    Sounds delicious, but I don't think pumpkin is on the acceptable list for induction because it has Libbys has 15 carbs per half cup. But you can bet Im going to try it for Thanksgiving. Thanks for sharing

      Your welcome. It is pretty good. I hope you enjoy it.

      Pumpkin is on the induction list of acceptable foods. I was excited about that as it added another dimension to what I can have. It is under the other veggies that we are allowed one cup per day of if we cut our salad veggies to 2 cups.

      The Libby's canned Pumpkin that I buy is 100% pure pumpkin. The label lists pumpkin as the only ingredient. There are 9 carbs per half cup with 5 grams of fiber. So, the Net Carbs for a half cup of the pumpkin would be 4. Of course, then add on 1 more carb if you add Splenda.

      I have bought the 100% pure pumpkin at Super Walmart and at Kroger. Just be careful and not pick up the wrong can because it is sitting right next to the pumpkin pie filling which would be a big carb no-no for us.

          Oh I'm glad I came across this. With only one week down in induction I was looking for "something" last night. I took 1/2 cup of pumpkin, added in pumpkin pie spice and heated up in microwave. I topped with whipped creme. It was great!!!

            I"m so excited about this! We grow pie pumpkins and I might have to go out today and pick some more to make this as a treat. Then I'll freeze some up for later in the season when I need a "quick dessert fix"

              Ok this is DELICIOUS!! I must say it is heaven right now and majorly curing my sweet tooth. PS I added 1 tbsp cream cheese to mine. YUM

                bummer that I dont like pumpkin. I wonder what else I can use instead of pumpkin and add the same ingrediants?

                  I loved this dessert! I tried all the pumpkin with cream cheese recipes and i can never get them sweet enough without that after taste but this was PERFECT!!!

                      I think I'm going to try this with some other ingrediants and try and make a mock pumpkin danish. I made a mock danish last night that was good, bread like consistancy. I'm going to use 1 egg, 1 oz cream cheese, 2 tbsps of pure pumpkin, 1 tbsp of ground flax seed, 2 packets of splenda and some cinnamon, and 1/2 tsp of vanilla. I hope it turns out like I think it will.

                        I made this today and it was just like eating pumpkin bread.
                        1 oz cream cheese
                        1 1/2 tbsp ground flax seed
                        1 med egg
                        3 tbsp of Pure Pumpkin
                        2 packets of splenda
                        1 tsp of Pumpkin Pie spice
                        Sprinkle of cinnamon on top.

                        Mix all together and cook in microwave for 4 - 5 minutes. Let cool

                              I never liked pumpkin before either. I gave some of these recipes a try and became addicted to the stuff. My favorite way, though, is just some butter, one pack Splenda and some salt and pepper. Tastes just like baked sweet potatoes, which I love. This is creamy smooth comfort food that takes the place of mashed potatoes quite well.
