  • Agua de Pepino (cucumber drink)

    Juice two cucumbers and pour into a 2 liter pitcher. Fill the rest of the way with ice and water and sweeten to taste. You won't believe how refreshing this drink is - it tastes like watermelon.

      Sounds good (except for the sweet part) Smart Water makes a cucumber water and you're right, it is very refreshing! I may have to try this minus the sweetener. But I don't have a juicer, hmmm.

          The "mother" of my house in mexico didn't have one either... she would take the cucumbers and cut them into chunks into the blender with some water. Then she just strained it all into the pitcher. She used the same process with a variety of fruits, but (even way pre-Atkins) the cucumber was always my favorite fruit for making the "aguas".

          I've had it unsweetened too - it's still very resfreshing, but doesn't taste like watermelon.

            When you juice anything, you're removing the more fibrous parts of the food, just something to be aware of.

              I'll have to use a blender, too - but would consider using the strained out fibous pulp in something, like perhaps a dip, not waste it.

                Thanks for the tip. I don't want it to taste like watermelon! I like the taste of the cucumber w/ water. I betcha you could also just float cucumber slices in a piture of water and still get enough flavor to make it yummy!

                  Oh definatley don't drink this 'water" to replace a veggie serving! LOL, I think its just a nice refreshing legal beverage! I know I get plenty of whole veggie servings everyday so not to worry!

                        I hadn't really thought of that! Does anyone make a low-carb <i>plain</i> yogourt? if so, we could make some tzatziki... add the pulp to the plain yogurt, a tad of olive oil, lemon juice and crushed garlic. I love that stuff.

                          I love Taztziki too (however you spell it LOL) But wouldn't that pulp be too smushy? and all the cucumber flavor would be out of it too! I think I'd use the pulp in my composter instead!
