  • Low carb Irish Cream - Happy Christmas!!

    This is very good - I've been experimenting in order to have a drink to relax with over Christmas without blowing myself out of the water. I love Bailey's and while this is not exactly the same, it's close enough and very delicious.

    2 cups heavy cream (16oz)
    0.5 cup strong black coffee (how strong is up to you, use good coffee)
    0.5 cup Whiskey
    1 tablespoon unsweetened cocoa powder
    1 teaspoon vanilla extract
    2 tablespoons granular Splenda


    Make the coffee and dissolve the splenda in it. Add the vanilla, then leave to cool. Beat the cream and cocoa together until the cream is just thickening. Fold in the coffee, add the whiskey slowly stirring all the time. Chill and serve over ice!

    Stays fresh in the fridge for a good while, but won't last long so that doesn't really matter!!!! Does need to be shaken or stirred a little after storage. You can vary the proportions of ingredients to taste - especially the coffee and whiskey.

    Fat: 179g (15g)
    Carbs: 24g (2g)
    Protein: 12g (1g)

    You could further reduce the carb count by using liquid splenda - I can't get that here.

    A similar serving size (2 fl oz) of Baileys would stack up as below:
