It is the middle of January the weather sucks it is gloomy and gray...what can I do to spark this house up today????? ....I have to clean the garage...and then go shopping and visit a recovering friend..but I want to bring some life to our dinner tonight...so I have the "Bridges to Havanna" DVD (Cuban and American artists making amazing music in Cuba PBS special) ...and I am going to do a Cuban MoJo on the grill!!!....here is what you do....get a couple of gallon zip loc bags then put big chunks of veggies like fennel, onions, sweet red peppers, eggplant..whatever and in the other bag put steaks, chicken breast, fish ...any kind of meat you like!... in a blender mix the following marinade and dump evenly between the veggies and the meat bag....close the bag pusing the air out and then mush it all around to assure a good melding ....
then go do your work! or go do whatever when you pass by the fridge during the day ..go mush the MoJo around again
when you are preparing the grill or at least an hour before cooking take the meat and veggies out of the fridge drain them well saving the marinade and let them sit at room temp for an hour.
then grill..use your own grilling style.... but less is more and a nice char and rare in the middle on steak is really the best ..veggies should be tender crisp...this is an awesome meal and I hope you will give it a try!!!....
you can serve it with Latino cheeses and it goes from wonderful to amazing!!!!!
Here is my recipe combined from a couple I have tried and loved!!!
1 Cup Extra Virgin or Virgin Olive Oil
use a nice flavorful oil for this one it does matter
2 great big heads of garlic peeled and sliced very thin
¼ cup sweet Yellow Onion, peeled, very finely minced
¼ cup fresh Cilantro (Coriander), stems removed and discarded, chopped fine
½ teaspoon ground dried Oregano
1 tsp kosher salt
2 teaspoons ground Cumin (cumin seeds pounded coarsly yourself are are best)
â…› teaspoon MSG (up to you I know people have issue with it but it gives that real Cuban edge and it is just a pinch).. I have no problem with a pinch of MSG in my food so I add it...
1 teaspoon fresh cracked Black Pepper
â…“ cup bitter orange (has the same carbs as lemon juice)
1 Cup fresh squeezed Lime Juice
and 1/4 cup fresh orange juice (if allowed if not you can use orange rind and water or even splenda to the above just to take the tart edge down a little...
â…” cup Water
In a large saucepan over medium heat, bring 2 Tablespoons of olive oil to temperature.
Add the prepared garlic and onion, cook until pale golden brown; 2 to 3 minutes only, stirring constantly.
Stir in the citrus juices, â…” cup water and all dry ingredients except cilantro.
Bring sauce mixture to a rolling boil.
Remove from heat and let cool to room temperature.
Stir the cilantro into the cooled sauce mixture.
when it is cooled you can use it for the marinade
you can double this and use it as a condiment!!!
