The entire recipe of eggs, cream, parmesean, grated cheese and water has about 8 total carbs according to FitDay.com. You would have to add carbs for anything you add to the quiche muffins ... mushrooms, peppers, sausage, bacon, ham, etc.
I estimate my ham and mushroom quiche muffins wind up with about 2 carbs per muffin.

I was wondering this too, I'm sure I will be fine with eggs for breakfast for a long time, but surely it gets a bit much? What next, a steak for breakfast? Or maybe during OWL, a low-carb bar or protein shake? I'm just hoping I can find some good low-carb snack foods since I'm terrible at cooking regularly!
For breakfast, I usually eat cold salmon (Cayenne seasoning) leftovers and cucumbers with Marie' blue cheese dressing. This way, too, there is nothing to cook because I just cut it up the night before when I am packing up dinner in containers.
I usually wait until lunch for egg salad or dinner for steak and eggs. I think eggs/cheese in the AM makes me a little nauseous, especially swiss cheese for some reason--the smell, I think, not the taste.

Hello, I've started the Atkins diet a few times in the past and having trouble staying with it. The biggest issue for me is the induction because I have a mild intolerance towards eggs. Any more than 2 eggs in a 24 hour period I fell sick to my stomach. That being said, having eggs in things doesn't seem to effect me quite the same way.
I'm looking for some good breakfast suggestions for the induction phase, I'm especially interested in "Skank"s posting about
"I Can't Believe It's Not Panackes"
I've never heard of them and can't find anything about them on the web. Would someone be so kind as to post the recipe for them.

I do not know exactlywhich ones he is referring to, but if it is the ones that are french toasty with pork rinds, those are pretty good. I've made them a few times.
And, if not eggs in the morning, why not just switch your lunch and breakfast around a few times? Steak and salad for breakfast is fine, then if you are up for eggs, have some for lunch in egg salad or omelettes. I had tuna for breakfast today, but if you aren't into that, chicken salad?? I also have some Miso paste and plan on making soup with yam noodles and chicken and veggies, so something like that, I would either have for breakfast, as well. Any leftover meats are better the second time around cause you can do lots of things with them.

Thank you for the suggestions. I'll certainly try that and yesterday I did. I had some philly cheesesteak meat with half of a fresh yellow squash and fried them with cajun spices and it was very tasty. Then a little left over egg salad (day before) with salad.
Today I've tried a one egg omelete with heavy cream. So far so good. I just realized I can have mushrooms (which I love) so I'm going to have them more often.
Can you tell me more about that pork rind pancake (recipe), I believe that's the same thing.

For breakfast I fry some crabmeat from the can in butter. Then, I add two eggs and semi scramble. At the end, I add feta cheese and with two bacon strips, you are set.
You can also make a tortilla out of cheese. Take any grated cheese and sprinke in a greased butter skillet to make a circle. Let it brown and flip over and brown the other side. Take out of skillet and it will crisp up. Top just about anything legal on it. That's the crunch I've been missing.
breakfast -
1 country cousin sausage - it's a patty type sausage at the walmart here - it's about 3 1/2" in diameter.
1/3 cup mixed onions and bell peppers grilled on a cast iron grill over the stove top mixed with 1/2 of a slice of bacon cut in 1/4 pieces. grill the onions, bell peppers and bacon while you are heating the pre-cooked sausage, i usually do this all on the same grill.
when the bacon and veggies are nice and done, i like a little charring, i add egg whites of 2 eggs, or you could add the whole egg - i have done that on occasion - if you add the whole eggs, just crack the egg directly over the veggie mixture as if you were frying an egg - when the egg whites of the eggs are done - flip the egg with the veggies and break the yolk, then begin flipping and turning the egg and veggies mixing it all in, when it is done enough for you, add a small handful of grated cheese and mix and turn some more. serve on a plate atop the sausage, topped with sour cream and salsa.
yum yum.
i have also served this with yolks of the eggs runny, lay one egg on the plate, top with sausage, top with another runny egg, top with grated cheese, top with grilled onions, peppers and bacon, top with sour cream and salsa - again delicious.
lunch
usually grilled chicken 1/4 - i buy 10 pound bags of chicken quarters here at walmart for like $3.50, there are usually 10-11 1/4's in each bag. i season them and let them rest overnight, i slow cook them over the bar b que pit on Sunday and eat the the following week.
i usually have one of them for lunch with either a salad or splenda sweetened cole slaw. my cole slaw is the deli kind in a bag from walmart - i add red onions, 1/4 finely diced jalepeno seeded, and mayo, vinegar, coarse ground black pepper and splenda to taste - you may like it sweeter or not as sweet as i do.
at least once a week i have steamed fish and a salad.
dinner
usually a lettuce or veggie salad, or my favorite tuna fish salad. side of cheeses, jello jigglers and pickles.
you gotta try my tuna salad. it is the absolute best and i could eat it all the time. in fact i do.
i make up enough for several days, because it really gets better the second day when it has chilled.
i take four cans of tuna in water, open and drain them in a collander. set aside.
cut one medium size onion into small diced size pieces.
1/2 cup dill relish, drained.
2 tablespoons mustard.
1/2 cup bacon bits.
3 shakes of tabasco hot sauce.
four hard boiled eggs, crush the yolk and dice the whites.
mix all this into a med size bowl.
fold it very well, turning and mixing.
take the tuna and press it, making sure the water has been strained out as best you can - i find turning the tuna over with a spatula or rubber spoon then pressing it with the back of the spoon into the collander helps.
fold the tuna into the mixture. mix well. you will have a bit of a dry mixture, slightly wet. add real mayo to the consistency you desire. for me this is usually about 1/2 cup of mayo. if you like your tuna salad real wet, add more mayo.
now, this step is optional, but i take 1/2 head of lettuce and shred it very thin with a sharp knife and then cut the shreds into approximately 2" long sections. this makes about 4 cups, maybe a little more.
mix the shredded lettuce with the tuna salad mixture, turning over and over getting the lettuce into the mixture well.
serve chilled with sugar free raspberry jello jigglers and cheese slices.
and a big cold glass of ice tea with a slice of lime.
now, the longer this salad sets the better it gets, by the next day, you will wonder if it is really tuna salad at all. it tastes like ham or chicken salad.
also, because of the bacon bits, i don't add salt, but you could if you wanted.
then i keep a bowl of sugar free jello and jello jigglers made up in my frig for dessert, which i usually top with whipping cream whipped and topped with splenda.
I missed my oatmeal so much. I got the ground flax seeds and make hot cereal out of it. I absolutely love it. I nuke 1/2 cup of water with one pat of butter in the microwave till boiling. Add the flax meal and stir...allow to thicken for about a minute. Then I add maple flavoring or cinnamon. Can try other flavorings too. And one packet of splenda. You can also add heavy cream. It's delicious. *I don't cook it because it seems to get a consistency of wet yeasty dough. But it can be cooked and still retain all it's nutrition. If your still hungry..add a slice of bacon or ham to your breakfast. But the cereal usually fills me up. !!!! And it's sooo good for you.
