I've been experimenting with different kinds of breading for frying fish...
I tried dipping in egg and then dipping into flaxseed meal...which worked well, but the flaxseed meal was a bit intense on it. Although Taste Tester #1 enjoyed it.
So I tried whirring 1 tbsp of the flaxseed meal up with an egg and a half tbsp of milk in my little food processor...didn't do so good...didn't stick very well at all to the fish.
So I tried dipping in egg and then in soy powder (not flour). Too much stuck to the fish. So I whirred a tablespoon of it up with an egg and a half tbsp of whole milk. This worked GREAT! Taste Tester #2 and I enjoyed it very much this way. It was a light batter, not a thick one.
Now my question...
I read on the Atkins website that soy powder, which is what I used, is lower in carbs than soy flour. The Nutrition Data on the package I have says that a quarter cup (20g) of the powder contains 5g of carbs, 3 of which are dietary fiber for a net of 2 carbs! This seems very good to me, considering for this recipe I could have battered 3-4 fish fillets with a tablespoon of soy powder---.5g carbs!
Actually...it sounds too good to be true. Is it? What do you know about soy powder??

PS: I should say that I am not on the diet (yet)...my kids and I try out things and verify their carb counts before I serve them to my husband, who is in OWL. Thanks for all the help! This board has been invaluable!
