  • MINI-CARB PIE CRUST???

    Hi, Ginnie here.
    I bought a box of Mini-Carb Pie Crust mix. I can't use it for two more weeks, but I still want to know how it tastes. Has anyone tried it?? I can think of sooooo many uses for it!

    I haven't tried the pie crust, but I did try the Mini-Carb apple cinnamon muffin mix (under $2 at Walmart!!!!) and was pleasantly surprised. They are really good and are great if you're in a rush at breakfast. They may spark cravings in some people so approach with caution! While my post doesn't help you directly, I replied in hopes that the muffins may be a good indicator of the brand. Hope it turns out well for you! :yes

      It's not that great. Kind of flat and nasty.

      I suggest making a DELICIOUS low carb pie crust out of ground almonds, butter and Splenda instead. You can add some WPI (wheat protein isolate) for a better texture.

        I agree w/ Naja the almond crusts are really good! My sis used it for a pumpkin pie and it was delicious!

          So you grind up the almonds, mix it with butter and splenda and then press it into the pie pan? Like you would a grahmn cracker crust? Sorry, I'm horrible at crusts but that sounds really really good!

              Here's a link to a pumpkin pie recipe w/ a walnut crust--you would make it the same way with almonds.

                And additional hint with almond crusts is to bake them for about 10 minutes at 350 degrees. Baking really helps to keep the crust from getting so soggy from the filling. I always do this with my cheesecake.

                    I agree with Naja about the nut crusts in general. I also vary the nuts depending on my mood, the usage and what I have on hand, using pecans, macadamias and hazelnuts in addition to the almonds. You can make your own nut flour in the food processor (just don't overprocess or you end up with nut butter). On the other hand, you can do a few things with the mini-carb crust (even though it's not great) that you can't do with a nut crust, such as create a crust covering for the top of a pie......
