So when I was in Mexico, they would take corn on the cob, slather it with a bit of mayo, then roll it in this cheese they called "Cotijo". I've also seen it as "Mexican-style parmesan". Anyway, I recently found a bag and bought it right away, without remembering that I can't have the corn. I know it sounds weird, but someone made me try it and it was delicious! I figure I can find some veggie to sub for the corn just so I can have that taste again.
In the meantime, I mixed it with eggs and poured it over onions & zucchini to bake. Oh my... It was so yummy, I mixed it with my eggs the next morning just for breakfast. Looked gross until the cheese melted, but it was delish. I had dome something similar with parmesan, but the cotijo really gives it a whole different texture.
So if you see this cheese in stores, it's worth some experimenting. We have a large Mexican population here so my local Walmart is carrying it.
