Found that the local Hy-Vee food store (Nebraska grocery chain) has a nice selection of low-carb foods and mixes. Tried the CarbSense Pizza Crust Mix - wasn't too bad, chewy, flavor wasn't too bad (but then I don't mind soy flour either), and each slice is only 3 g net carb. Made home made sauce (home canned tomato sauce spiced up with olive oil, spices and salt), and toppings. I calculated with all my veggies and meats and cheeses, about 7 g net carb per slice.
Since I only made one pizza, the other half of the dough was rolled out into 8 bread sticks (olive oil and parmesan topped). Roommate and I each splurged (2 slices and 2 breadsticks), and the rest saved for lunch.
The mix itself looks pretty simple - Vital wheat gluten, soy protein concentrate, low-glycemic corn starch, guar gum, salt, garlic powder, soy lecithin, and spices. They also include a packet of quick-rise yeast. Has anyone tried to duplicate this recipe out there?
