  • 1 gram bread from Julian Bakery

    So, I'm searching Craig's List the other day, and stumble across an add for 1 gram bread from a place called Julian Bakery. I look at a couple reviews around the net, and check out their website. Convinced they're legitimate, I decide to order two loaves.

    The bread arrived about 10 minutes ago, and I'm on my second slice with butter. It is absolutely flippin' AWESOME! If you've ever had Irish brown bread, that's pretty close to what it tastes like. And it's filling. After 2 slices (and only TWO NET GRAMS OF CARBS!!) I'm feeling pretty satisfied.

    Here's the nutrition info:

    Calories: 119
    Calories from Fat: 9
    Total Fat: 1 g
    Saturated Fat: 0g
    Cholesterol: 0 mg
    Sodium: 140 mg
    Total Carbohydrate: 13g
    Dietary Fiber: 12g

    But are you on Induction, as it's written on your profile? Because the ingredients in the bread are
    Whole grains, bean, seeds of *kamut®, *spelt, *wheat, *rye, *millet, lentils, eggs, soy protein, flax, sesame, *quinoa, *amaranth, wheat gluten, 7 grain flakes, oat bran, sea salt & yeast.

    *Organically Grown
    so it is only allowed during OWL Rung 9, Pre-Maintenance and Maintenance.


    You should also run the product through the hidden carbs calculator. The actual carb count that comes out is 16.3 g. If you exaggerate the protein and put it up to 12.5 instead of 12 g, you'd still have 15.8 g per slice.

        Wow so ur saying that per slice of bread there is around 16grams of net carbs!!!! how do they get off cheating people like that?????

          No, total carbs. And 12 of fiber, as they say, so that's 4 net carbs per slice.

            I should update my profile. I've been on Atkins for a couple years now.

            So, explain this hidden carbs concept? Is it endorsed by the Atkins folks? I've just been going based on the book: total grams - fiber and sugar alcohols.

              Right. So there are some ingredients (e.g. sugar alcohols) that supposedly have a negligible impact on blood sugar levels, which is why manufacturers are allowed not to list them on the nutritional label. Now whether they have a negligible effect or not is questionable, and is one of those YMMV things.

              Looking at the ingredients in the bread, I have no idea where the hidden carbs are coming from. However, if you do the math, you have 9 calories from fat, 48 (4x12) from protein and 52 (4x13) from carbs, which add up to 109. The 10 calories you're left with should come from somewhere else. Usually they come from carbs, which means that you have 2.5 carbs (10/4) that are not listed on the label.

              There are also more sophisticated hidden carb calculators, like the one I linked to above, that make slight adjustments in the calculation, based on the food you are entering (baked product, spices, etc.).
