Cheese Stuffed Eggplant
Hi Momtofour :wave ~ I have been wanting to try eggplant too , I am trying to keep it interesting for my husband. We are doing the Atkins plan together. This is our fourth week. He has pretty much lost all the weight he needs too so , I want to start adding some different dishes . Anyway I found this in one of the Atkins cook books I have and it sounds pretty good to me.
Serves 8:
4 medium size eggplants
2 medium size onions , chopped
3 Tbsp. butter
3 cups crumbled feta cheese
1/2 cup grated Parmesan Cheese
1/4 cup ricotta cheese
1 egg
2 Tbsp. chopped parsley
season salt
Preheat oven to 350 degrees F.
Slice eggplants in half . Scoop out pulp , chop it and set aside. Reserve the shells . saute' onions in butter until golden. Add eggplant pulp and continue to saute' for about 5 more minutes. Transfer mixture to bowl and let cool.Add cheeses to mixture, beat in egg and parsley. Stuff mixture into eggplant shells and sprinkle with salt. Bake for 40 minutes.

Well, if you want to K.I.S.S. (Keep it simple sweetie), you can just wash and slice eggplant into 1/2" pieces, lay flat in a microwaveable glass dish and coat with extra virgin olive oil, lightly salt and use McCormick's Italian seasoning. Flip the pieces over and repeat. Cover pan with lid (preferably glass) and throw in microwave for 8 minutes at 7-high in a 1000W microwave. Serve immediately. The eggplant will be tender and tasty!

Old post, but I think Eggplant is best in its regular state...I slice it in about 1/4" slices and put them on a pan, drizzle a little olive oil, salt and pepper, then broil until browned. Flip them over and let them brown on the other side. Soooo good!Higgies
