Ingredients to make low carb meatloaf:
3 pounds ground beef
3 tbsp butter
1/2 cup chopped onion
1/2 cup mushrooms, chopped
1/2 cup heavy cream
1 cup Kraft Parmesan Cheese
4 oz shredded mozzarella cheese
Prepare low carb meatloaf:
1. Preheat the oven to 350 degrees.
2. Melt the butter in a small skillet and saute the mushrooms and onions until soft, about 5-7 minutes.
3. In a large bowl, combine the sauteed vegetables, ground beef, heavy cream, parmesan cheese and mozzarella cheese. Mix well, this works best with your hands, not a spoon.
4. Press the mixture into a loaf pan. Sprinkle a little parmesan cheese on top for a nice crispy topping.
5. Bake for 1 hour. Let stand for 5 minutes before cutting into slices.
