    Zucchini Casserole:

    This is one of my grandmother's recipes. I had forgotten about it, but was trying to think of ways to cook zucchini and remembered. She is no longer with us, so that makes it extra special. I did not even think of it as low carb until I read it again:

    2 large zucchini
    2 onions, can be cut back on if necessary
    4 cans tomato sauce, can use low sugar if you can find it
    2 lbs ground chuck
    2 lg bell peppers
    1 lb grated cheddar cheese

    Peel zucchini and slice. Bring to a boil and let cool. In a separate pan, brown ground chuck with onions, peppers, and tomato suace. Salt and pepper to taste. Cook until onions and peppers are tender. Place a layer of zucchini in a casserole dish, layer of sauce mix, layer of cheese. Continue layering until done. Tope with cheese, and bake uncovered at 400 degrees for about 45 minutes.

        My MIL just made this yesterday when we were at her house. I couldnt try any because she puts wheat flour in the burger and used ketchup, but it sure smelled great!

          Ragu makes a Low-Carb sauce but it is still 7 carbs a 1/2 cup. Gotta try to make my own sauce from tomatoes and see how it tastes.. maybe a touch of splenda or sweetnlow? Recipe sounds great!

            I have made something similar to this many times, like zuchinni lasagna- sometimes I add ricotta cheese, but I always just use a can of diced tomatoes instead of sauce(seasoned with garlic, italian spices and onion)... I usualy pan fry the zuchinni first as well and then layer everything up- very good!!!!
            Caution I BITE! clicky clicky..its tricky rikki!

              I just made this and it is wonderful, but I cooked the Zucchini with the ground beef and onions and I also added a can of rotel...delicious! Thanks for the wonderful recepie!
