    Hi all;
    I am working on this recipe, here is what I have so far. I havent actually tried it yet, so I am unsure how many servings it would make, but I hope to try it soon. If anyone tries it, let me know how it comes out.

    Recipe still in progress…

    1 pound lean ground beef
    1 1/2 cups cottage cheese 8.4carbs
    2 cups shredded mozzarella cheese 4.8carbs
    1/2 cup grated Parmesan cheese 2carbs
    3 eggs 2 carbs
    1/2 teaspoon dried oregano
    1 Cup hunts no sugar added spaghetti sauce 12carbs

    Meanwhile, in a large skillet brown beef on medium heat. Drain and cool.
    Preheat oven to 350 degrees F (175 degrees C).
    Combine beef, cottage cheese, 1 cup mozzarella cheese, Parmesan cheese, eggs and oregano. Mix well.
    Lightly grease a 9x13 inch baking dish.
    Pat mixture into pan, top with 1 Cup Hunts no sugar added spaghetti sauce, then sprinkle rest of Mozzarella.

    Bake in preheated oven for 50 minutes.

    Carbs for whole recipe: 30
    Servings: 6?

    Hey, since it's in progress...are you taking any suggestions?

    I've made some great manicotti in the past, and almost all the filling is legal (for OWL at least). I usually use ricotta cheese instead of cottage cheese, but if you're trying to cut something from the ricotta then cottage is a good choice. Also, try using 1/2 hamburger and half ground veal...it's a little more expensive, but it's really good!

    I think I'm going to try your recipe out though and see how it's working! Let me know how your's ends up!
