Egg Muffins

  • Egg Muffins

    Mix 9 beaten eggs,
    1lb breakfast sausage cooked with 1/3 cup onions, drained & cooled a little (add peppers or mushrooms if you'd like)and pepper.
    Spray or grease lightly a muffin pan.
    Pour a tiny bit of egg mixture in muffin cups.
    Top with a 1/4 th of a slice of any cheese.
    I used white American. Add more egg mixture till 1/2 inch from top.

    Top with another 1/4 th of a slice of cheese and bake @ 350 for 15-20 min till browning on top. Like little omelets. Store in plastic bags in frig. this recipe made 18 muffins. Eat 2 and your satisfied. Could use bacon bits too.

    Hi DanuMaeve, Sorry if I appear to be thick, I can follow most of your recipie, it sounds great and convenient but what do I do with the morning sausage please

      Just add it to the eggs after you've beaten them, and before pouring them in the muffin cups.
      Sorry about that.

        This recipe was GREAT!

        But since there's only one of me, I scaled the recipe down.
        I used about 1/2 of a pound of sausage and 7 eggs to make 9 muffins (sounds weird). I think my muffins probably ended up bigger than yours - as I used almost a whole egg for each muffin as opposed to 1/2 an egg. Whatever the case... these are great. I love the convenience of it.

        Word to the wise - do not use paper muffin cups. The egg sticks to it and you end up having to pick the paper off to eat the muffin. Put directly into the muffin tin (grease the tin w/ a bit of butter), they come out like perfect little round pieces of sunshine! HAHA!

        I used sharp shredded cheddar cheese and it gave them a nice kick.

          I make these all the time, different variations. I like mushrooms and breakfast sausage....Last week I put a piece of raw bacon in each muffin tin(I made a circle with the bacon and placed in tin)then cracked 1 egg in each tin, salt and peppered, topped with cheese and baked. There were so good and pretty too.

          One I put mushrooms and a cube of cheese, then the beaten egg. That was good too.

          But you are right, they are great for work breakfast.
