Hmm...my zucchini's are only about 5-6 inches long...lol I guess that's why they are coming out like pancakes! Oh well, they still taste good!

Yea, JD, we grow them big here LOL, ours are about 16 inches long and probably 10 inches around...I've never measured one, I'm just guestimating, but they are big suckers! I wouldn't want to get hit upside the head with one of them, that's for sure!

I’ve put all ingredients in grated zucchini mixture except butter. 1 tablespoon butter has been used for cooking zucchini patties in a pan.

Sorry, that's not what I meant. If you are using a 3 pound zuccini you only used the amounts of everything else that are listed in that recipe? It doesn't seem like 1 egg would be enough to hold together that much zuccini.

MotherOfGizmo, I apologize for such a huge mistake. You see, in my country we use different measurement system so I needed to convert all amounts. I meant 3 oz zucchini (about 90g) not 3 pounds. I’m so so sorry.

OH, no problem, please don't apologize! I wasn't very clear with my question.

Yep though, 3 ounces is alot different than 3 pounds! LOL so, is 3 ounces about the average size of a zuccini for your country? If it is, then I can figure out how to make that recipe work for 48 ounces by multiplying it by 16....wow, that would be 16 eggs! LOL, I think I will just give it a try with part of one of our huge zuccini's! I don't want to feed the whole neighborhood!

Re: Hash-browned Zucchini(Induction friendly with picture)

I did make this and it was very good. I used 3 small (7 in long and about 2 inches wide) zucchini and doubled all the ingredients. I mad me think of potatoe pancakes. I will definately have again. I am going to try to make this next time with no salt. I think that I could probaly put in in a strainer and just let it sit longer.

Any idea on the carb count?

                    Momtofour,

If I make this your way with the three small zucchini and double the rest of the recipe's ingredients, do you have any clue what the carb count would be?
