    2 INGREDIENTS (Really!)

    My dad (I think) invented this or adapted it.

    We buy an eye of round roast and a stick of pepperoni. Take a butcher knife and make an X cut in the end of the roast as far as the knife will reach. Then do it again on the other end. Usually this suffices to have a cut throughout the middle of the meat. Stick the pepperoni in and roast (I wrap mine with foil and roast at 350 in an open pan) until tender. When you slice it you have a round piece of meat with a perfect cirle of pepperoni in it. The pepperoni spices permeate the meat and it is so wonderful. I serve this all the time for guests; we maintain our low carb and they think it is tremendously "fancy".

    Should less than a gram per serving. Induction safe.

    I tried this yesterday in the crock pot and it was great!


    Today I am taking the leftovers, shredding the beef, topping with grated parmesan and grated mozerella cheeses and Dr. A's Russian Dressing!! (dressing is posted under Salads)

    A little different meal but still great taste!!

    Thanks for the idea of mixing roast and pepperoni!!

        Hi Youpper!!

        Any size will do., I don't know how long Melissa cooked hers in the oven, because I did mine in the crock pot. Put it on in the morning and when you come home from work, it'll be done! I like easy!!
