    Tuna Melt

    Okay, this one I was playing around and just wanted to have a grilled chees/tuna melt. So I just threw this together and was pretty surprised was very tasty...

    1 microwave bowl
    handful of pork rinds
    Scoop of Tuna fish (prepare just as you normally eat tuna)
    sprinkle some bacon bits on top
    layer your favorite cheese..

    Put in microwave for about 20 seconds (or until cheese just starts to melt)
    And enjoy ,.... it was a nice change from just plain tuna and pork rinds

    I LOVE a recipe similar to this. I've never tried it with the pork rinds though. Sounds yummy!!!

      I tried this, only added a chopped-up hard-boiled egg and it was wonderful!

        I drain a can of tuna and add a small amount of mayonnaise (1-2 teaspoons, just enough to moisten) and 1 small stalk of celery coarsely chopped.

        You can also add sauteed mushroom slices, chopped bell peppers, or any other veggie that seems appealing. When I'm in a hurry I just stick with celery.

        Spread the tuna mixture over the bottom of an oven safe or microwave safe dish, and cover it with cheese. I prefer American or a mild cheddar for this dish. Broil or microwave until the cheese is melted and everything smells scrumptious.
