  • Mock Corn Beef Hash

    I have been sorely missing my favorite corn beef hash (sadly, from a can). I have found a substitute that I can live with. It uses radishes as the mock potatoes. Boiling the radishes leeches out the bitter taste.

    This is NOT a quick recipe, but if you are a die-hard corn beef hash fan and have been missing it, it's well worth it. It requires boiling your radishes FIRST, letting them drain and cool before chopping for the hash. I did mine the night before and just refrigerated until I was ready to make the hash.

    ADD SALT at your OWN RISK - I would recommend that you DO NOT ADD SALT to this recipe.

    Ingredients:
    • 1-2 tbsp canola oil (or your favorite cooking oil)
    • 1/2 cup chopped onion
    • 1 cup chopped radishes (must be BOILED 1st for about 30 minutes, drained, and cooled - I think I used about 10 radishes)
    • 1 can corn beef (my brand is Libby's and is 12 oz. AND it's salty)
    After radishes have been boiled, drained and cooled; dice radishes, set aside.

    Dice onions. Heat oil, saute onions. (I added salt and pepper. I would not recommend adding the salt. The corn beef is very salty from the can.)

    After onions have sauteed about 5 minutes or so, add diced radishes and sautee another 5 minutes.

    Add canned corn beef, tearing it up as you add it to the fry pan. Stir and cook for approx 7-10 minutes. Season to taste.

    Enjoy!

    NOTES: I was honestly afraid to try it because I missed my "real" hash so much, even though it smelled good. But, it is good!!

    I will check salt contents on other brands of corn beef before purchasing again to make. I initially cooked too many radishes, so I had some left over. I cooked 2 bunches. One bunch is enough for one can of corn beef. I cook for only me.

    I had a hard time finding a carb count for "cooked" radishes, but for raw, the carb count is a little over 4 and fiber is just under 2, making NET CARBS for the radishes about 2. Onions were a totally different story: I cooked my dish before I checked the carb count. NET CARBS for 1/2 cup diced onion is 6 carbs. The corn beef is zero carbs. So you can adjust this.

    I LOVE corned beef hash. The hospital that I work at used to serve it for breakfast once a week. They may stilll, but I go in at 8am now instead of 530, so I am not for sure.

    The only time I have ever eaten radishes was at my grandmothers a long time ago. She used to put them sliced in salad.

    I may have to try this. Not much beats a good serving of hash!!!!

    My family thinks it is gross, by the way. MORE FOR ME!!!!!!!

      My family doesn't like it either. Like you said - more for me!!

      p.s. Those radishes even smell like potatoes after you cook them. Weird, but good for me!

        Turnips, celery root (celeriac), and daikon (a type of asian white radish) can be used to substitute for the potatoes in corned beef hash too!

          Looks like I'll have to try this The only canned corned beef I can find here lists ridiculous amounts of salt (and nitrates), I'm afraid. Some even have sugar ... but this sounds like perfect comfort food. I might try this with small celeriac cubes, too... hmmmmmm.

            Good call, Yeminitegreen. I'm so bad at looking at the ingredients list. Libby's does have sugar (even though it says 0 carbs) - dang! and nitrites!

            I'll have to see what options the health food stores have. I knew there was a reason it was so darn good.
