  • MamaK's Pizza Omelet

    Delicious!

    Pizza fillings of your choice:
    I use 1/2 c crumbled sausage, 10 slices pepperoni, 2T sliced green pepper.

    Saute filling in a pan. Pour into a bowl and sprinkle with parmesan cheese.

    Whisk together 3 eggs.

    Pour into pan and continue to swirl pan until all edges of pan are coated with egg. DO NOT FLIP. Keep swirling until the omelet is pulling away on the edges and the top is glistening but not liquidy.

    Slide half of omelet onto plate, pour in fillings, flip top half of omelet over.

    Top with 1 T sugar-free spaghetti sauce. (I used carb options)

    Sprinkle 1 oz mozzarella cheese on top.

    Serve!

    Approx 5 g carbs for dish, with my ingredients. It will depend on what YOU add

    okay all i have to say is YUMMY~!

    i only used 2 eggs so i would taste the "pizza" more, and instead of putting the sauce on top, i put it in the eggs before i flipped it, along with the toppings..and i added mozzerella cheese in the filling too. then i topped with the parmesan cheese and now i have a new fave. food! thanks for the idea!

        Oh this sounds so good. I made Linda's Deep Dish Pizza and I have left over ingredients and this is perfect! Thanks for creating such a great way to make a tasty omelet.

        I will make this for tomorrow's breakfast.
