    Enchilada Beef'n'Rice Pie

    1 large bag frozen cauliflower -or- 1 large head cauliflower
    1 can enchilada sauce (I use a local mexican brand, any lc one will do)
    1 lb ground beef
    8 oz shredded cheddar cheese

    Shred cauliflower. I use frozen, let it thaw 10 minutes, and then throw it in the food processor. Cook (I steam mine in the microwaveable steamer) till half-tender.

    Brown ground beef with Mexican spices. Mix 2 oz cheese with rice, put in 8x8 pan. Top with ground beef. Pour can of enchilada sauce on top. Top with 6 oz cheddar.

    Makes 4 large servings. Carbs depend on your brand of sauce. Mine comes out to 7g carbs a serving (3 for sauce, 2 for cheese, 5-3 for cauliflower)

    Edited to add: DUH! Yes, you cook it! 375 for 30 minutes. Then I broil for a few minutes to get nice bubbly cheese.

      I made this tonight and it was very good. I found a Kroger brand sauce with only 3 g. per serving. I have really missed enchiladas and this did it for me. Thank You!
