  • Mexican Hamburger/Rice Pie

    We love all variations of this, which is a variation on the enchilada pie.

    16-oz bag frozen cauliflower, slightly thawed, shredded
    1 lb ground beef, cooked, crumbled
    4 oz cheddar cheese, shredded
    8 oz queso quesadilla (can sub monterey jack, but the queso is divine)
    1 green pepper, chopped up fine
    1 T minced dried onion
    1 t garlic powder
    1 T mexican seasoning

    Mix all except cheddar. Put in a 9x13 pan. Top with shredded cheese.

    Bake 35 minutes at 375. Broil for 2 minutes to get bubbly.

    Delicioso!

    Carb (fiber is already subtracted) counts for whole casserole: 12 for cheeses, 1 for onion, 6 for green pepper, 11 for cauliflower: 30 for entire casserole, so 6 servings @ 5 carbs each or 8 servings @ 4 carbs each
