  • Corned Beef and Cabbage!

    We can all be Irish more than just one day a year. I love this with horseradish and/or mustard!

    Ingredients:

    1 3lb corned beef brisket

    1/2 cup sliced onion or scallions

    1 bay leaf

    1/2 teason of whole black peppercorns ( I tend to use more as I like peppercorns)

    3 cups of water

    1 1/2 Pounds of cabbage, cut into wedges

    DIRECTIONS

    Trim any visible fat from the meat and set aside.

    Place rack in a 4-6 quart pressure cooker (or anything that works -I've used my crock pot often) Add the meat, onion, bay leaf, black peppercorns and the water.

    Place lid on and cook for about 50-65 minutes

    Allow to cool, carefully remove meat and onions and set aside.

    Place the cabbage wedges in pot and heat till tender and cooked (personal choice as to how crunch or soft you like the cabbage).

    Serve with meat and onions and Enjoy! Makes about 6 main dish servings.

    Nutritional Facts per serving : calories 255, total fat 17g, saturated fat 6g, cholesterol 88mg, sodium 1039, CARBOHYDRATE 7g , FIBER 4g, protein 18g, vitamin A 1% , vitamin C 69%, calcium 3% , iron 14% . These are my best calculations.

    THANK YOU!! I have never had corned beef and cabbage anytime but St. Patty's day and never made it myself. I threw this in the crock pot on my way out the door and when I got home stuck in the cabbage, I was in heaven. So easy and soo tasty!! Thanks

        I wanted to make this and was doing a search to see if cabbage is ok!! i am sooo excited I am going to the store now- I love cabbage loaded with butter- and now it's ok!!!! And corned beef --yum!!!!!

          Use the Thick Cut corned beef...not the Thin. It's a world of difference in the taste. The packages are clearly labeled, or if you're fortunate enough to live in an area that has butchers shops he/she will set you up right if asked!

              There is no better way to cook corn beef than in a pressure cooker.

              Oh, man is it good.

              And I like your idea of cooking the cabbage in the beef drippings.
