  • Tasty Chicken Salad

Grill chicken breast and dice or chop into tiny pieces
Mix in Mayo, a little onion, chopped green olives and freshly grated parmesan cheese.

I'm not good with measurments. Add as much as you think necessary. This chicken salad is absolutely delicious.

Thank you so much for this recipie. This is just the type of simple recipies that I need right now since I don't really know how to cook. I am starting to collect really easy ones. One question, do you just put the chicken breast right on the grill or do you marinate it or anything? How long do you cook it? When my mom has tried to do chicken on the grill it is always burned and sticks to the grill and the grill flames up. By green olives, do you mean those very strong tasting spanish olives stuffed with that red stuff or are there green olives that are like the black olives? Thank you so much.

This is a GREAT recipe. I had roasted a chicken but most was left, so I put the meat through a meat grinder. I loved it, and my 6 year old absolutely adored it

I do something very similar -- on the weekend I either bake or grill a big bag of chicken breasts/tenders (whatever) and then process them through the food processor. Add a little chopped onion - this week I added a little leftover red pepper. Then I have a spread for the week!

If I want to grill extra for the family - I usually just marinate them in Kraft italian salad dressing -- very yummy!!

Are the green olives ok during induction?
