  • Scallops wrapped in bacon ... making this up as I go along

    OK dinner tonight:

    large scallops
    bacon
    walnuts
    atkins diet bake mix
    garlic
    olive oil
    parmesan cheese

    OK I am making this up but I think it at least sounds good now that I am hungry and I am making this tonight

    take scalops ( if needed cut into bite sized pieces )
    partially fry bacon

    wrap bacon around scallops and stick with toothpics
    put in broil safe dish that was coated with garlic olive oil

    top with grated walnuts and grated parm cheese and some atkins bake mix ( as a bread crumb substitute )

    broil for =~ 7 minutes or until they look cooked

    squeeze a lemon on top salt and pepper to taste

    I would have wrapped the scallops with procuitto (sp? ) rather than the bacon that I used ... the bacon was very good bacon but had too strong a taste which overpowered the scallop.

      You cook like I do and I love the visual. Scallops one of my favorites and this sounds great. I gakked out on King Crab Legs and Grilled Scallops on my birthday which was Day 14 of induction by the way. Skipped the red Lobster and convinced the wife that we'd do it at home since there's no way I wanted to smell them Garlic Bicsuits !!!

      This sounds excellent and I'm going to give it a go. Maybe this weekend...
