  • Parmesan Chicken

    Package of boneless chicken breast.
    Coupla cups of grated Parmesan cheese
    Coupla eggs
    Your favorite seasonings (I like "Emeril's Orginal Essence"..."BAM!")

    Dredge the chicken in the egg.
    Dredge the chicken in a mixture of Parmesan cheese and your favorite seasonings.
    Bake at 375 for approx. 30 minutes depending on the thickness of the chicken.

          I prepared this dish last Saturday and my family loved it! I used a combination of dried parmesan and fresh grated Piave Vecchia (another hard Italian cheese). Absolutely extradordinary. The only problem? I made too little of it!!

            I made this tonight. It was OK. I think I had two problems: 1) not enough cheese and 2) should've used skinless...I made this with legs and thighs, which produced a lot of excess liquid fat in the pan and made the bottom of the chicken soggy. Also, it took a little longer to cook, so the little cheese topping I had was a bit overcooked.

            Even with all these problems, it was still pretty good. I think it would be even better if I used boneless, skinless white meat and used a lot more cheese.

              Wayless....I tried it too last week with drumsticks and had the same results......next time gonna use more cheese and put the chicken pieces on a little rack in the pan so maybe that will create crustiness all round.

                I made this last weekend it was so Yummy! My DH has requested it again this weekend. I used boneless skinless breasts and rolled them in a mixture of Fresh and Bottled Parmesean Cheese. I baked mine on a rack and it had a nice crispy coating. To make it even more yummy I added a thin slice of Mozzarella cheese to the top just before serving.Yum. Of course that was all of my cheese allowance for the day.
                For Dh and my kids ( I have a 2 year old who will only eat dishes made with pasta) I cooked a nice pasta sauce and noodles to go along with it.

                  I made this tonight and loved it! My dh is a picky eater(he isn't low carbing) and thought it was yummy. I will definetly make this again.

                    I made this tonight and it was really good! I used thighs and cooked them on a rack. They didn't come out soggy at all. They did cook for about 45 minutes.

                      I made this today and it was good! Still perfecting which spice blend to add to the cheese, but I know that garlic powder and oregano taste great with it.

                      I wonder if there's a way to get more cheese to stick to the chicken strips? Although mine did come out pretty crunchy on the ends, there were still "bald" patches on the chicken where the cheese didn't stick. Any tips?

                        Did you fry the chicken? If you fry it, it will be crispier.
                        For avoiding "the bald parts" be sure you coat right with the egg all the piece and then with the cheese.

                              It works fine skinless. I use the boneless skinless breast, slice them into chicken "fingers" prepare them like above but fry them instead of baking them and they come out great!
