  • Homemade Sausage. YUMMm

    I found this site and my mouth is squirting it sounds so good. I also like the idea of a Sausage Making Party. Wouldn't that be fun.

    What would be even more fun DT is to too have the party...make the sausages...then cook and eat "em all up!

      me too I love them and make my own so I know what is in then but I don't fill them just make bulk rolls of them

          HEY I CHECKED OUT THIS RECIPES

          SWEET ITALIAN SAUSAGE WITH WILD FENNEL AND FOUND OUT IT WAS THE SAME ....AS MY BROTHER MAKES AND YOU CAN MAKE IT THIS WAY. ALSO
          INSTEAD OF THE PORK YOU CAN USE DEER MEAT ITS REALLY GOOD BUT WHEN I MAKE IT I USE HALF DEER AND HALF HAMBURGER THATS THE BEST FOR ME.... YUMMY

            Hi all!

            My DH and I make a Danish sausage at Christmas, it's so yummy!

            The stuffing into the casings is my favorite part!

            No actually, eating it is my favorite part...the casing stuffing just makes me laugh!

              Shelly can I have your recipe. I'm 2/3s Danish but my Grandparents returned to Denmark when I was 3 so I never learned any of their recipes.
              As long as the recipe doesn't contain lutfisk

                LOL! Of course! Here you go!

                Medisterpolse
                4 pounds lean pork
                1 pound side pork
                1 large onion grated
                1 T salt
                1 t pepper
                1/2 t allspice
                1/2 t cloves
                1 cup stock (I use chicken stock)
                Grind meat 3 to 5 times. Add seasoning and mix well adding stock a little at a time. We stuff them into the medium size casings (dinner size sausages)...you can use the smaller casings too.

                To prepare, put sausages in boiling water, bring back to a slow boil and cook for 10 minutes. Then put them in a skillet with a little butter and turn until nicely brown...another 10 minutes or so. They're great with a nice mustard!

                Here's another good one. My DH family makes a traditional Danish meal for Christmas Eve and it includes this other type of sausage/meatball. I'll give you the whole recipe, it does have a little flour, so you could substitute if you wanted.

                Frikadeller (lovingly called Frik )

                1 1/2 pound lean ground beef
                1/2 pound ground pork
                1 grated onion
                1/8 t pepper
                4 T flour
                1/2 t cloves
                1 1/2 t salt
                2 eggs
                1 cup club soda

                Mix the meat together. Mix the remaining ingredients with the club soda and then mix all with the meat. It'll be a little soupy. Put in the fridge for an hour or so. Then heat a heavy skillet to a medium heat, shape the meat balls into a football/oval shape about 3x2x2 inches. Fry them, burning to brown all sides...about 15 minutes total cooking time.
