Hot Chicken (Turkey) Salad

  • Hot Chicken (Turkey) Salad

    This is a tweaked version of the recipe I found in the "Dr. Samuel Mudd Family Recipe Book". Great for using up leftovers and you can vary the veggies to suit your tastes.

    Hot Chicken (Turkey) Salad
    3 cups cooked chopped chicken (or turkey)
    1 cup mayonnaise
    4 ounces cheese of your choice*
    1 cup chopped celery
    1/2 cup chopped onion (or green onion)
    1/2 teaspoon ground thyme
    1 teaspoon paprika
    1/4 or 1/2 teaspoon cayenne pepper

    Regular oven directions.
    Pre-heat oven to 350 degrees F. Butter or oil a baking dish. Set aside.

    In a bowl, combine all the ingredients except for 1 ounce of the cheese. Pour the mixture into the prepared baking dish. Top with remaining cheese.
    Bake until everything is hot and bubbly.

    Microwave directions.
    Butter or oil a microwave safe dish. Set aside.

    Saute the veggies in oil until softened then combine with the remaining ingredients, except for 1 ounce of the cheese. Pour into the dish. Sprinkle with the remaining cheese. Microwave 2-5 minutes (or more depending on your microwave) until the cheese is melted and the casserole is hot and bubbly.

    *Cheese: Use any kind you like. The way the cheese is cut will affect the texture of the casserole. If the cheese is in cubes, there will be pockets of cheese throughout the casserole. If the cheese is shredded, the cheese will be creamy but evenly distributed throughout the casserole.

    Optional Ingredients:
    OWL additives:
    Many hot chicken salad ecipes include toasted slivered almonds.
    Add boiled legumes, like pinto beans.

    Veggie alternatives: add leftover cooked asparagus, chopped broccoli, chopped cauliflower, cubed cooked pumpkin, etc.

      This wil be an excellent way to use up the extra Turkey after Thanksgiving! Of course, I may boil a chicken tomorrow and try it sooner than that!

        Baby, I grill a bunch of boneless skinless chicken breasts on the weekend. I use a George Foreman Grill to do it. Anyhow, this is a great recipe for them or even leftover chicken. It's great to bring to work, because I have a choice of how to eat it. If I want it hot, I toss it in the microwave. If I want to eat it cold (like regular chicken salad), I don't heat it up.
