  • Killer Deviled Eggs! Only 1 carb each!

    This is a family recipe handed down by my m-i-l. I used fitday for most of the ingredients, with the exception of the dry mustard and dry onion flakes. Everything else came up to 10.98 g of carb for a dozen eggs. I hope that's enough info for you. . .

    Mash yolks from one dozen eggs
    Then add:
    1 tsp yellow mustard
    1 tsp dry mustard
    2 TBSP apple cider vinegar
    3 TBSP mayo
    2 tsp sweet pickle relish (you need this to adjust the tartness from the vinegar)
    1 tsp dry onion flakes
    4 strips bacon, crumbled, or real bacon bits to taste (this is the secret ingredient!)

    Fill eggs and chill. Voila!

      In case you are anal like me, here is more specific nutrition info for these eggs. (I didn't put the sweet relish in and only used 1T of cider vinegar).

      I ran the whole recipe through MasterCook for these values:

      A serving is two halves...

      Per Serving (excluding unknown items): 104 Calories; 8g Fat (73.0% calories from fat); 6g Protein; 1g Carbohydrate; trace Dietary Fiber; 190mg Cholesterol; 114mg Sodium.

          I don't use sweet relish when I make the deviled eggs. I use dill relish and then add a bit of splenda to make up for the missing sugar. I never miss it - and the carb count on sweet relish is kind of high....

          I also sometimes substitute a can of deviled ham for the bacon - tastes very good and gives them a very creamy texture.

            I use Mt Olive sweet relish sweetened with Splenda.

              Thanks for the info - I didn't know that anyone made a sugarfree sweet
              relish with Splenda - I'll look for it and try it in my eggs!
