Hi all. I made this for dinner the other night and I thought it was really great. It comes out of the Atkin's cookbook but is NOT in DANDR and I didn't find it on his site either. What a shame! I have the recipe card at home so I don't remember the carbs off the top of my head but will post it later tonight for you. Anyway, here it is.
Austrian Paprika Chicken
2 broiler chickens (I used boneless, skinless breasts instead because it was what I had and it turned out good)
2 tbsp vegetable oil
2 tbsp butter
1 clove garlic
4 small onions (I used a half a large one coarsely chopped)
1 cup sour cream
1 cup chicken broth
2 tbsp paprika
salt to taste
melt butter into the vegetable oil and brown chicken. Remove chicken and place in a baking dish. To remaining oil, add onion and garlic and saute until golden. Add sour cream, broth, and paprika and stir until smooth. Salt to taste. Pour sauce over chicken. Bake in a 350 degree oven for 1 hour covered.
Since I live alone, I cut the sauce recipe in half and used 3 chicken breasts which worked out great.
