    Salmon Cakes
    1 can salmon
    1 egg beaten
    1/4 cup chopped/minced onion
    salt and pepper to taste
    crushed hot and spicy pork rinds

    Drain the can of salmon and empty out the salmon and remove bones in the middle portion of the salmon. Add egg and onion and pat into flat cakes. Press the cakes into the crushed pork rinds - I crushed them in my food processor. The hot and spicy rinds do not make it hot or even spicy but it does give the salmon a wonderful flavor! Fry in small amount of oil till brown on both sides.

    Besides the egg and small amount of onion, this recipe has virtually no carbs. I made these for my family, and they loved them. I doubled the recipe and froze the leftovers for a quick and easy meal when I need it the most and have no time to cook!!

    oh man i remember these from when i was a little kid only my crangmother called them salmon croquetts.
    I never though of low carbing them.

      I made these today, added some diced green pepper. They were wonderful.

        How do you keep the patties from falling apart? We've made these about 5 times (used to be a staple, but we used flour in the patty and breadcrumbs instead of pork rinds). Without the flour in the patty, I can't get them to hold their shape while frying. We've tried bran flakes & flax meal, but neither works very well. I can't imagine it was just the bread crumbs that held the thing together!!

          i WAS just heading for the kitchen to make these. My parents have followed my lead with the diet because it brought my blood pressure down so quickly and my mom showed me this exact same recipe and they are wonderful. I keep a bowl in the fridge. They are clean to eat on the run also, just nuke (or eat cold, I like them that way also) and you can carry them with you will running errands or just around the house for a snack. I cook mine in light olive oil.

            Oh my goodness this recipe is so good. Im cooking it right now with my sorority sister...It was so wonderful and taste so good...umm umm good...Thank you whoever came up with this wonderfully delicious idea. :yes
