Hey MOG! I finally made your chicken dish tonight!! It was so good! The changes I made include parmasean cheese & chicken stock. Otherwise, everything else was the same. mmmmmmmm

I'm the one who does it with mushrooms, as the mildest of peppers upset the tum!

We did this a week or so ago, with chicken breasts, and rolled inside the last of the Xmas ham, mushrooms sliced thin, parmesan and some tasy cheddar. I fastened them up with toothlicks and string, put them in an ovenproof dish with rosemary, oil and butter, and about 5 mins before serving sprinkled a tablespoon of pine nuts over. Yum yum! We had stir fried veggies on the side and the BD had rice (he's not doing ATkins).

The hubby & I tried this last night & it was fabulous! The only changes we did was added our own blend of seasoning salts. Excellent recipe! Thanks for the recipe suggestion MOG!
