  • Bird's Nest Breakfast

    make as many as you want.....you use a muffin tin for each one

    1 slice deli meat (black forest ham is usually the best) >1 C
    1 egg .6 C
    1 tbsp heavy cream .4 C
    1 tbsp shredded swiss .3 C
    sprinkle w/ dried basil
    Total Carbs = about 2.3

    Preheat oven to 350. Butter muffin tin (be sure to put 1.2 inch of water in holes you arent using). Put ham in hole positoning around the sides to form a cup. Crack egg into ham cup. Add 1 tablespoon cream. Top with swiss and basil. Heat for 15-20 miinutes.



    Serving size: as many as you can fit in your muffin tin......1-12 I guess?

      I don't know what I like more, the recipe or that cute baby. She is a doll and I want to pinch her cheeks. LOL.
      You can do the same in a microwave, but you need to beat the egg so it doesn't explode all over the place.
