After seeing another thread on salmon patties, I was inspired to make these. Hope you like them. These also might be good for an appetizer.
1 tin salmon (I think it's 7.5 oz.)
1 chopped green onion
1 egg
1/2 cup ground pork rinds (ground flax might work too, but use less)
2 TBS chopped cilantro
1 1/2 TBS Sambel Olek or Asian chili sauce of your choice (ensure it doesn't have sugar)
salt and pepper
vegtable oil for frying
Mix all of the ingredients together and form into small patties (makes about 20 patties slightly larger than a silver dollar). Fry in the oil, being very careful when turning (these are delicate until they form a crispy coating).
They are good on their own, hot or cold. I like them with some wasabi mayo (basically wasabi mustard and mayo to taste).
You could make larger patties, and serve them on a salad, maybe thin the wasabi mayo with water or cream and use as a salad dressing.
