This is an Atkin's friendly version of my mom's best quiche ever. It's really easy to make and uses only 5 ingredients!
4 jumbo eggs
1 1/2 c shredded Swiss cheese
10 slices cooked bacon, chopped
1 c frozen broccoli, thawed slightly and chopped
nutmeg to taste (maybe 1 tsp)
Beat eggs in a medium sized bowl. Add cheese, bacon, broccoli, and nutmeg. Stir well. Pour into pie tin that has been greased with butter. Bake at 350 degrees for approximately 30-40 minutes.
Total carbs 19.4 for whole quiche (using the USDa Nutrient Database). I cut this into 4 generous portions for approx 5 carbs each.
Just a note for those on Induction: On days I eat this, I do not eat any additional cheese since there is plenty in the quiche.
